25 Glorious Greek Yogurt Recipes

The first of the Greek yogurt recipes on the list is actually how to make Greek yogurt. This is a good place to start, because you can always make it to your liking, and knowing how to make it means that it always available for you to incorporate in to any dish that you are preparing.

To make Greek yogurt you are going to need one quart (thirty two ounces) of full fat pasteurized cow’s or sheep milk, two tablespoons of plain unflavored yogurt that contains active live cultures and another two tablespoons of full fat milk.

When you begin to make your Greek yogurt recipes all of your ingredients must start off at room temperature.

In a sauce pan, bring you milk to just boiling and pour it into a plastic container. Let the milk cool to lukewarm temperature, which is 100 to 105 degrees Fahrenheit, a skin will form on top of the milk. In another bowl, mix the two tablespoons of yogurt with the two tablespoons of full fat milk. Then add this to the lukewarm milk. When adding this mixture to the lukewarm milk, be sure to pour down the sides of the container so you do not disturb the skin that has formed.

Cover the completed mixture with a clean dishtowel and place on another towel in a place that will stay warm and dry until it become thick. This process will usually take eight hours at the minimum. Up to twelve hours is suggested but nothing longer than that. If the yogurt is allowed to coagulate for longer than twelve hours it will become sourer. After this time has elapsed, pour off any excess liquid and then refrigerate for four hours before use.

If you want thicker yogurt that is used in some traditional Greek dishes, line a medium bowl with cheese cloth, pour the yogurt into the middle of the cloth and lift it out of the bowl by the corners. Tie the cheese cloth at the top and squeeze to drain out as much of the liquid as possible. Place the cheese cloth containing the yogurt in a strainer and then into a bowl without the strainer touching the bottom so the yogurt continues to drain. Refrigerate the bowl for 3 hours then, while still in the cheesecloth squeeze out any remaining liquid with your hands. Un-tie the cheesecloth, and use a spoon to put the thick yogurt into a bowl for use.

This homemade Greek yogurt can be stored in the refrigerator for five days. After that it is time to throw it out and make a fresh batch. But before you do that you might want to save at least two tablespoons of it for making your next batch.
